Q: How should I care for my copper cookware?
- Never heat an empty pot. Always add oil, butter, or a liquid before turning on the heat.
- Cook on low to medium heat. Copper is highly conductive and does not require high temperatures. Overheating can damage your piece.
- Avoid abrasive tools. Use wooden, silicone, or plastic utensils to preserve the interior tin lining.
- Handwash only. Clean with warm water, a gentle soap, and a soft sponge. Dry immediately to avoid water spots.
- Polish as needed. Use a gentle copper polish or a natural mix of lemon juice (or vinegar) and salt to restore shine.
- Don’t store food in the pan. After serving, transfer leftovers to a separate container before cleaning your piece.
Q: Can I use CMK cookware in the oven?
Yes! Our cookware is oven-safe, but we recommend not exceeding 430°F (220°C) for our tin-lined pieces. Always use oven mitts, as handles and knobs (especially bronze) may become hot.
Q: Are CMK copper pieces safe to cook with?
Yes! All of our cookware is lined with food-safe tin, a traditional, nickel-free material known for its naturally non-stick qualities and exceptional heat conductivity. Over time, your piece may require re-tinning after prolonged or improper use.
Q: Why choose tin lining over stainless steel?
We use tin exclusively for its unmatched thermal conductivity, low-stick surface, and historical authenticity. While softer than stainless steel and sensitive to high heat or metal utensils, tin is beloved by chefs for its performance and character. With proper care, it can last for years and be re-tinned as needed.
Q: Can I use CMK cookware on induction or electric cooktops?
Copper is a non-ferrous, non-magnetic metal, so our copper cookware isn't induction-compatible on its own. However, you can use an induction interface plate to cook with CMK pieces on induction stoves.
We recommend using all our cookware on gas cooktops to fully appreciate their exceptional responsiveness, but electric cooktops can also be used. Just remember:
- Put the food in first before turning on the heat
- Start on low-to-medium heat
- Match pan size to burner size
- Never overheat
Q: What can’t I cook in tin-lined copper cookware?
Avoid high-heat techniques like dry searing, stir frying, or toasting spices. Acidic foods such as tomatoes, wine, or lemon juice are fine occasionally, but regular use may wear down the tin lining faster. For frequent high-acid cooking, consider a stainless steel option.
Q: How can I polish and maintain the copper finish?
Over time, copper will naturally darken and develop a rich patina. To restore shine:
- Use Wright’s Copper Cream, Kleen King, or similar cleaners
- Or apply a natural remedy: mix lemon juice (or vinegar) with fine salt, gently rub, rinse, and dry
- Dry immediately after washing to prevent water stains and preserve the glow
Q: Can I wash my cookware in the dishwasher?
No. Dishwashers and harsh detergents can strip copper’s surface, dull the tin lining, and corrode the rims. Always handwash gently and dry thoroughly.
Q: What if the tin lining changes color?
Tin may develop iridescent spots or discoloration with heat—this is normal and safe. These changes don’t affect performance and aren’t a sign that re-tinning is needed unless you can see exposed copper.
